Irish Tea
2-3 teabags of black tea
milk
sugar

Boil one kettle full of water. Place 2-3 teabags of black tea into a tea pot and then add boiled water. Let steep for 3-5 minutes. Fill a teacup 1/4 -1/3 full of milk and add tea. Some people prefer to also add sugar. This is a personal preference so it is best to place a sugar dish on the table. Cover teapot with a tea cozy to keep hot.

Irish Coffee
3/4 cup of very hot coffee
1 1/2 tsp brown sugar
1 large measure Irish Whiskey
1 1/2 tsp double cream

Warm a whiskey glass (preferably stemmed) with hot water to prevent cracking, and then throw out the water. Refill the glass with boiling water then throw out the water again. Pour the coffee into the glass until just over half full and add sugar to taste. Stir thoroughly, then add the whiskey. Pour the cream over the back of a spoon so that it floats on top. Serves one.
