Known as the patron saint of couples, St. Valentine was of Roman descent, and he spent his life working as a priest; in time, this romantic and self-sacrificing saint become a Martyr, due to his good deeds aiding oppressed Christians during the third century.

During an ancient Roman festival of pagan origin (the Lupercalia), men and women would pay homage to Saint Valentine through special romantic rituals.

For example, a man would select a piece of paper from a box filled with notes; whichever woman’s name was on his piece of paper would celebrate the festival as his new partner…

The Christian Church, which plainly disapproved of such pagan debauchery, made their own “game”, where every believer would select one of the Saint’s names from a wooden box, and then try to emulate that saint’s spirit and achievements during the Valentine period…

In the medieval age, Feb. 14th officially became a day for romantic couples… sending Valentines to sweethearts was soon customary; according to legend, St. Valentine helped to united star-crossed lovers by passing notes from one to the other, and thereby defying Roman authorities.

In fact, even while being imprisoned for his good deeds, St. Valentine reputedly continued to collect notes from his visitors, so he could then pass them on to their pining partners…

Saint Valentine’s Remains Rest in Ireland…

While little historical evidence of this romantic figure actually exists, it’s safe to say that there is some important connection between the lauded Saint and the spirit of true love; today, Saint Valentine’s remains may be found at Whitefriar Street Church, Dublin.

Those who make pilgrimages to be close to this Saint’s remains often do so on St. Valentine’s Day; couples frequently travel to Whitefriar Street Church to view the beautiful statue of St. Valentine that is prominently displayed…and to “bless” their love in the presence of his earthly remains.

The doomed patron saint of lovers was tortured and then executed under instructions from the Roman Emperor, Claudius II Gothicus; he died on February 14th.

Of course, for intermediate and expert bakers, the winter holiday season is always an excellent time to dazzle friends and loved ones with rich and aromatic sweet treats that are truly unforgettable…

Whether you’re a skilled baker or an enthusiastic novice, you’ll find that Ireland’s traditional holiday dessert recipes offer a host of exciting options that will work wonderfully with the festive season.

If you’re of Irish ancestry (or just fond of all things Gaelic), why not use the Emerald Isle as the inspiration for your holiday baking?

To help you learn more about Irish desserts, we’ve compiled a fun list of a couple of tasty options (recipes included)…

Traditional Baked Apples

Red apples often figure prominently in Christmas decorations, such as the “sugared” apple ornaments shown at left.

Using apples and warm, comforting spices to create traditional holiday desserts is very appropriate, and these baked treats will fill your home with an irresistible scent that is really quite heavenly.

Our traditional baked apple recipe is wholesome, juicy, and so simple to create.

If you need help coring the apples, consider using a corkscrew – this trick really works, and it saves you plenty of time and energy.

You won’t need to peel your apples – the skins are loaded with flavor (which develops beautifully during the baking process) and nutrition…

You will need:

4 Apples
3  tsp. butter, 1/4 cup of water
1/4 cup of white sugar
1/4 cup of brown sugar
3 tsp. of ground cinnamon
1 tsp. of ground allspice
1 tsp. of nutmeg
1/4 cup of raisins

Nuts (if desired)

Instructions:
Core your apples and rub the outside skins with butter. Mix sugars and spices in a bowl. Then, roll the buttered apples in the dry sugar & spice mixture. Put the apples in an oven-proof ceramic dish.

Fill the hollow cores of the fruits with nuts (optional) and raisins. Pour water into the dish, and then bake for about an hour, or until the apple skins open up. Serve very warm.

 Whiskey Cake

Are you looking for a decadent, grown-up dessert for your holiday dinner parties and get-togethers? Irish Whiskey cake is an excellent option that will wow your nearest and dearest this season.

The Emerald Isle is known for its smooth and exquisite whiskeys, including Michael Collins and Bushmill’s brands.

Pick up a bottle of Ireland’s finest, and then use a dram or two in your holiday dessert…

If you can, make this luscious cake the day before you plan to serve it, so that the flavors have time to blend…

You will need:

For the cake…

One box of yellow cake mix

A packet of instant pudding, in vanilla flavor (small size package)

4 medium-sized eggs (white or brown)

One-third-of-a-cup of Irish whiskey

1/2-a-cup of vegetable oil (such as Crisco)

1/2-a-cup of cool water

1/2-a-cup of nuts (if desired)

Glaze ingredients…

1 stick of real butter

One-quarter-of-a-cup of water

One-and-a-half-cups of white sugar

Half-a-cup of Irish Whiskey

To prepare:

Start by preheating the oven to a temperature of 325 F. Prepare your cake pan by flouring or greasing it (a tubular pan or Bundt-style pan will work well for this recipe). Then, if you are using nuts, spread them evenly across the bottom of the pan.

Mix your cake ingredients together carefully, being certain that all elements are blended properly. Then, add the batter to your cake pan. Bake for 60 minutes, then cool and flip onto a serving platter.

Make the glaze by heating butter in a small pan, until just melted; then, add water and stir in sugar. Boil this mixture for four minutes, and then take if off the burner. Stir in your Irish whiskey to finish.

Poke holes in the dessert and then dribble the glaze over the top of the Irish whiskey cake- this way, the tasty topping will drip down throughout the cake…

Light a Candle on Christmas Eve…

In an Irish home, on Christmas Eve, a large candle is often placed near the front window – the candle’s flame is meant to evoke a spirit of welcome.

Once, Mary and Joseph travelled through the dark night, looking for shelter…luckily, they stumbled upon a kindly Bethlehem innkeeper who was willing to put them up in his stable.

There was no room at the inn, but Joseph and Mary still had a rough-hewn stable roof over their heads as Jesus was born.

Perhaps Mary and Joseph once saw the flicker of a candle in the innkeeper’s window, and were grateful for the possibility of help and shelter on that very important night…

Now, many Irish people honor the innkeeper’s kindness and humanity (and the birth of their Saviour) by burning their own candles on Christmas Eve. This centuries-old ritual may also signify the Winter Solstice…

Many Irish families also use holly to create wreaths and other adornments for their home – traditionally, holly was a popular choice with less-affluent families…it was cheap and easy to find.

Decorations made of holly are meant to be left up until early January – in fact, superstition dictates that taking these decorations down before January 6th will bring a spate of bad luck…

Modern Irish Christmas Traditions…

Would you enjoy taking a refreshing dip in an icy river? If you might, you may be a prime candidate for the South Dublin “Christmas Dip” – this yearly event brings die-hard swimmers together to frolic in the frigid Irish Sea.

If you’re around Sandycove, South Dublin this December 25th, be sure to don your swimsuit and test your mettle in the freezing cold waters.

You’ll be assured of an encouraging audience as you take the plunge…it will be surreal to remove your coat and line up for a dip, while an audience stands watching (all bundled up in their parkas and winter gloves).

Not for the faint of heart, the Christmas Dip is a fun and lighthearted way to be a part of the Dublin community on Christmas Day…you may need a hot cup of tea (or something a little stronger) afterwards!
